Weekend Menu Planning

Today feels like the first weekend I’ve had in a long time.  I didn’t get dressed today (although, I did shower); I didn’t leave the apartment; I didn’t do anything other than lounge around.  It felt so good.  So, slowly–now that I’m feeling a little guilty for all of my lounging–I’m putting together some meal ideas to cook tonight and tomorrow.  Here is what I have so far:

We went grocery shopping yesterday, so I also have some beets and green beans in the fridge.  I think I might simply roast the beets and saute the green beans with some bacon.  I was also thinking of making a curry with the green beans.  I just cannot decide on recipes today.  I spent an embarrassingly long amount of time looking over chicken thigh recipes.  Teriyaki, adobo, honey mustard, braised, cacciatore, fried, baked, stewed, etc., etc…the list of things one can do with chicken thighs is mind-numbingly endless.

What is your favorite dark meat chicken recipe?
