Good Morning! It’s Menu Planning Time!

This week was my first week back teaching. The five year old started school. Henry is starting school. We are truly scrambling to make this all work. It’s exhausting. School went well for me this week, though. I was dead tired by Friday, but it was a great week.

My meal plan worked this last week, for the most part. I made a couple casseroles that tasted great and reheated nicely for work.
Here’s my plan for this week:

Sunday night: Honey Mustard Roast Chicken with Apple Sausage Cornbread Stuffing

Monday night: leftovers

Tuesday night: Smothered Chili Colorado Burritos

Wednesday: Chili made from the burrito meat

Thursday: Dinner out

Friday: Spicy Thai Basil Chicken and rice

Hopefully all of these things will work for leftovers. I have never made these recipes before and that’s always a risk–relying on a new recipe without much of a backup.

Anyway, the five year old wants to “pertend to play liberry,” so I’m out, folks.
