Hot Damn

Standard

The roast beef I made today was an utterly perfect way to end a dreary Monday. Simple recipe. Roast + onion soup mix + cream of mushroom soup + water. That’s it. Embarrassing in its simplicity. I’m thinking I cooked it for almost 12 hours. Got home from work, mashed some red potatoes, and then roasted acorn squash with ancho chili powder, butter, brown sugar, and salt and pepper.

We ate and drank a beer. And then that’s all she wrote. What a delicious, rainy evening.

Now I’m watching MasterChef, under a warm blanket, and surfing the web for recipes. Three I’ve come across will definitely get put into next week’s rotation. Check them out:

  1. Creamy Pesto Caprese Pasta Casserole
  2. Garlicky Scalloped Tomatoes
  3. Pork and Lentil Soup

Happy fall, happy rainy night, happy crock pots, and lots of love to you and your families tonight!
